Chicken Fajita Stuffed Peppers

Ingredients
  

  • 1 cup Chicken Breast Fillet cut into small strips
  • ½ cup Diced White Onions
  • 2 cloves Garlic minced
  • 1 tbsp Paprika
  • 3 tbsp Butter
  • 2 cups Cooked Brown Rice
  • 2 Bell Peppers cut in half and cored
  • 6 oz Shredded Mozzarella

Instructions
 

  • Heat butter in a pan.
  • Add chicken. Season with salt and paprika. Sear until brown.
  • Stir in onions and garlic until aromatic.
  • Toss in cooked brown rice.
  • Divide the mixture into the pepper halves.
  • Arrange stuffed peppers in a baking dish.
  • Pour enough water into the dish to about half an inch high.
  • Top with shredded cheese
  • Cover the dish with foil and bake for 30 minutes at 350F.
  • Take the dish out of the oven and uncover. Top with shredded cheese and bake for another 5 minutes.
