- 1 cup Chicken Breast Fillet cut into small strips
- ½ cup Diced White Onions
- 2 cloves Garlic minced
- 1 tbsp Paprika
- 3 tbsp Butter
- 2 cups Cooked Brown Rice
- 2 Bell Peppers cut in half and cored
- 6 oz Shredded Mozzarella
Heat butter in a pan.
Add chicken. Season with salt and paprika. Sear until brown.
Stir in onions and garlic until aromatic.
Toss in cooked brown rice.
Divide the mixture into the pepper halves.
Arrange stuffed peppers in a baking dish.
Pour enough water into the dish to about half an inch high.
Top with shredded cheese
Cover the dish with foil and bake for 30 minutes at 350F.
Take the dish out of the oven and uncover. Top with shredded cheese and bake for another 5 minutes.
