Taco Hand Pies

Ingredients
  

For the Pastry:

  • 1 cup All-Purpose Flour
  • Pinch of Salt
  • 6 tbsp Cold Butter
  • 2 tbsp Cold Water

For the Filling:

  • 1.5 cups Ground Beef
  • 1/3 cup Diced Tomatoes
  • 1 tbsp Taco Spice Mix
  • 1/3 cup Shredded Cheddar

For Serving:

  • ½ cup Queso

Instructions
 

  • Combine flour, salt, and cold butter nuggets in a food processor. Pulse into a coarse mixture.
  • Add cold water and pulse until mixture turns into a smooth dough.
  • Lightly knead the dough then wrap and chill.
  • Meanwhile, brown ground beef in a pan. Add diced tomatoes and taco spice. Simmer for 5 minutes.
  • Take off the heat then stir in the cheese.
  • Take dough out of the refrigerator and transfer onto a lightly-floured surface.
  • Roll out into a 1/8” thick sheet and cut into 4 squares.
  • Spoon filling into the center of each square.
  • Take pastry from one corner and fold over. Seal by crimping the edges with a fork.
  • Arrange pies on a parchment-lined baking sheet.
  • Bake for 20 minutes at 350F.
  • Heat queso in the microwave to melt. Drizzle over hand pies to serve.
