Ingredients
  

  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • ½ tsp Salt
  • 1 tsp Cinnamon
  • ¼ tsp Nutmeg
  • 2 Eggs
  • ½ cup Brown Sugar
  • ½ cup White Sugar
  • ½ cup Vegetable Oil
  • ½ cup Crushed Pineapples
  • 1 cup Grated Carrots

For the Frosting:

  • ½ cup Cream Cheese softened
  • ¼ cup Butter softened
  • 1.5 cups Powdered Sugar
  • 1 tsp Vanilla Extract

Instructions
 

  • Line a 9”x9” pan with parchment. Preheat the oven to 350F.
  • Whisk together flour, baking powder, salt, cinnamon, and nutmeg in a bowl.
  • Blend together the eggs, sugars, oil, and pineapples in a separate bowl.
  • Blend the dry ingredients into the wet mixture.
  • Fold the carrots into the batter.
  • Pour the batter into the baking pan and bake for 35 minutes.
  • Beat together all ingredients for the frosting.
  • Take the cake out of the oven and leave to cool.
  • Spread frosting on top of the cake and cut into squares.
