For the Waffles:
- 1 cup Waffle Mix
- 1 cup Milk
- 1 Egg
- 1 tbsp Vegetable Oil
For the Filling:
- 1 tbsp Butter
- ½ cup Sliced Bell Peppers
- 2 Eggs beaten
- 2 Slices American Cheese
- Salt and Pepper to taste
Combine all ingredients for the batter in a bowl. Blend into a smooth batter.
Divide the batter onto a waffle iron and cook.
Heat butter in a pan.
Sautee bell peppers until soft.
Fold in eggs to cook.
Season with salt and pepper.
Take a pair of waffles and fill with eggs, bell peppers, and cheese.
Bake for 5 minutes at 350F.
