For the Waffles:

  • 1 cup Waffle Mix
  • 1 cup Milk
  • 1 Egg
  • 1 tbsp Vegetable Oil

For the Filling:

  • 1 tbsp Butter
  • ½ cup Sliced Bell Peppers
  • 2 Eggs beaten
  • 2 Slices American Cheese
  • Salt and Pepper to taste


  • Combine all ingredients for the batter in a bowl. Blend into a smooth batter.
  • Divide the batter onto a waffle iron and cook.
  • Heat butter in a pan.
  • Sautee bell peppers until soft.
  • Fold in eggs to cook.
  • Season with salt and pepper.
  • Take a pair of waffles and fill with eggs, bell peppers, and cheese.
  • Bake for 5 minutes at 350F.
