Instant Pot Chicken Noodle Soup

Ingredients
  

  • 2 pounds boneless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup diced onions
  • 1 cup diced celery
  • 1 ½ cups carrot slices
  • 2 teaspoons garlic
  • 1 ½ teaspoon thyme
  • 1 teaspoon rosemary
  • 2 basil
  • 8 cups chicken stock
  • 6 ounces wide egg noodles

Instructions
 

  • Add the olive oil to the instant pot.
  • Select "Saute" on the Instant Pot. Allow it to heat.
  • Add the chicken onto the instant pot.
  • Cook until the chicken lightly browns on both sides.
  • Pour in the chicken broth, salt, pepper, onion, celery, carrots, basil, rosemary, garlic and thyme.
  • Place the lid on the Instant Pot, turn and lock.
  • Press the "Manual" button on the Instant Pot on high pressure, and then set the timer to 15 minutes.
  • Once cooking time is complete, naturally release.
  • Remove the chicken from the pot & shred the chicken.
  • Place the chicken back into the instant pot.
  • Select "Saute" on the Instant Pot. Once the stock starts to boil, add the egg noodles.
  • Boil until the noodles are tender.
