  • ½ lb. vegan shell pasta cooked al dente
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 1 red pickled pepper diced
  • 2 tablespoons flour
  • 1 ¼ cup coconut milk
  • Salt and pepper to taste
  • 1 teaspoon paprika powder
  • ½ teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ¾ cup tomato sauce
  • Freshly chopped parsley for garnish


  • . Boil your pasta in a pot with salted water until al dente. It will take around 5-7 minutes.
  • In a nonstick frying pan over medium heat warm the olive oil and cook your diced onion and red pepper for 1-2 minutes.
  • Stir in the flour and cook for another 2 minutes.
  • Stir in the coconut milk and let the whole mixture thickens slightly.
  • Add the salt and pepper to taste, paprika powder, garlic powder, onion powder, and dried oregano.
  • Finally, stir in the tomato sauce and cook for 2-3 minutes more.
  • Drain and stir your pasta into the sauce.
  • Serve in a bowl and sprinkle some freshly chopped parsley.
