Ingredients
  

  • 4 slices gluten-free sandwich bread
  • 2 eggs
  • 1/2 cup milk
  • 1 Tbsp maple syrup
  • 1 Tbsp peanut butter melted
  • 1/4 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 Tbsp butter

Toppings:

  • 1 ½ tbsp peanut butter melted
  • 1 ½ tbsp maple syrup

Instructions
 

  • In a small bowl, whisk together eggs, milk, maple syrup, peanut butter, cinnamon, and vanilla.
  • Over medium heat, melt butter in a large skillet and coat the bottom of the skillet.
  • Lightly dip each side of bread into egg mixture, scraping off any excess. Arrange bread in heated skillet and allow to cook 3-4 minutes before flipping and cooking an additional 2-3 minutes, until golden brown.
  • Top with melted peanut butter and syrup or any of your favorite French toast toppings!
