- 1 1 ⁄2 lbs. Boneless skinless chicken thighs cut into pieces
- 1 lb. Shrimp peeled and deveined
- 1 lb. Smoked sausage sliced
- 1 ⁄2 C. Celery chopped
- 1 ⁄2 Onion Chopped
- 1 Red bell pepper chopped
- 3 tsp. Minced garlic
- 2 Tbsp. Tomato paste
- 2 Tbsp. Cajun seasoning
- 1 Can diced tomatoes
- 1 C. Chicken broth
- Salt and pepper to taste
Place all of the ingredients into the Crockpot.
Cook on high for 4 hours or low for 8.
Serve alone or over cauliflower rice if desired.
