Sun-Dried Tomato Pasta with Chicken and Mozzarella

- 1 tbsp Olive Oil
- 3-4 Sun-Dried Tomatoes chopped
- 150 grams Chicken Breast Fillet cut into strips
- 1 tsp Minced Garlic
- ½ cup Heavy Cream
- ¼ cup Shredded Mozzarella
- 200 grams Cooked Penne
- Salt and Pepper to taste
- 2 tbsp Chopped Basil Leaves
Heat olive oil in a pan.
Add chicken and sun-dried tomatoes. Stir over high heat for 6-8 minutes.
Add garlic and sauté for another minute.
Stir in heavy cream. Bring to a simmer.
Add mozzarella and stir until smooth. Thin out the sauce with pasta water as needed.
Season to taste with salt and pepper.
Toss in cooked pasta and fresh basil.
