Mexican Sweet Potato Skillet

Ingredients
  

  • 1 ½ lb. Boneless skinless chicken breast cut into pieces
  • 2 Tbsp. Olive oil
  • 1 Onion chopped
  • 2 Sweet potatoes pre-boiled until crisp tender and cut into cubes
  • 1 Can black beans drained and rinsed
  • 1 C. Corn
  • 1 Can diced green chilis
  • ½ C. Salsa
  • 2 tsp. Taco seasoning
  • 1 tsp. Oregano
  • ½ tsp. Garlic powder
  • Salt and pepper to taste
  • 1 C. Taco blend cheese
  • Chopped parsley or cilantro for garnish

Instructions
 

  • Add the oil to a skillet over medium high heat.
  • In a bowl, combine the taco seasoning, garlic powder, oregano and salt and pepper to taste.
  • Place the chicken into the skillet with ½ the seasoning mixture. Saute until cooked about halfway.
  • Mix the onions into the skillet, and saute until softened and the chicken is cooked through.
  • Add the sweet potatoes, corn, chilis, salsa and beans into the skillet along with the remaining seasoning. Stir to combine, and saute for another 5 minutes.
  • Remove the skillet from the heat, sprinkle with the cheese and allow it to melt before serving.
