Dipping Sauce
- ½ cup Chopped Cilantro
- 2 tbsp Pine Nuts
- 1 tsp Minced Garlic
- 1 tbsp Lemon Juice
- 2 tbsp Canola Oil
- 1 tbsp Sugar
- 1 tbsp Water
- ½ tsp Ground Cumin
- Pinch of Salt
Egg Rolls
- 1 cup Diced Avocados
- 2 tbsp Minced Red Onions
- 2 tbsp Chopped Cilantro
- ¼ cup Diced Tomatoes
- 4 Egg Roll Skins
- 1 tbsp Cornstarch dissolved in 2 tbsp Water
- Oil for Frying
Combine all ingredients for the dipping sauce in a food processor. Blend into a coarse paste.
Toss avocados, onions, cilantro, and tomatoes in a bowl. Lightly season with salt.
Take an egg roll skin and fill with about ¼ cup of the avocado mixture. Roll and seal edges with cornstarch slurry.
Deep fry egg rolls until golden. Drain excess oil on paper towels.
Serve with dipping sauce on the side.
