Ingredients
  

Dipping Sauce

  • ½ cup Chopped Cilantro
  • 2 tbsp Pine Nuts
  • 1 tsp Minced Garlic
  • 1 tbsp Lemon Juice
  • 2 tbsp Canola Oil
  • 1 tbsp Sugar
  • 1 tbsp Water
  • ½ tsp Ground Cumin
  • Pinch of Salt

Egg Rolls

  • 1 cup Diced Avocados
  • 2 tbsp Minced Red Onions
  • 2 tbsp Chopped Cilantro
  • ¼ cup Diced Tomatoes
  • 4 Egg Roll Skins
  • 1 tbsp Cornstarch dissolved in 2 tbsp Water
  • Oil for Frying

Instructions
 

  • Combine all ingredients for the dipping sauce in a food processor. Blend into a coarse paste.
  • Toss avocados, onions, cilantro, and tomatoes in a bowl. Lightly season with salt.
  • Take an egg roll skin and fill with about ¼ cup of the avocado mixture. Roll and seal edges with cornstarch slurry.
  • Deep fry egg rolls until golden. Drain excess oil on paper towels.
  • Serve with dipping sauce on the side.
