Loaded Mashed Potatoes with Cheese and Bacon Topping

- 750 grams Potatoes cubed
- ΒΌ cup Butter
- 1/3 cup Heavy Cream
- Salt and Pepper to taste
- ΒΌ cup Cooked Bacon
- 1/3 cup Shredded Cheddar
- 2 tbsp Chopped Scallions
Put potatoes in a pot and cover with water. Boil for 20 minutes or until fork tender.
Drain the potatoes and return to the pot together with the cream and butter.
Mash until well blended.
Season with salt and pepper.
Transfer the mash to a baking dish then top with cheddar and chopped bacon.
Bake for 10 minutes at 400F or until cheese is melted.
Top with scallions to serve.
