Loaded Mashed Potatoes with Cheese and Bacon Topping

Ingredients
  

  • 750 grams Potatoes cubed
  • ΒΌ cup Butter
  • 1/3 cup Heavy Cream
  • Salt and Pepper to taste
  • ΒΌ cup Cooked Bacon
  • 1/3 cup Shredded Cheddar
  • 2 tbsp Chopped Scallions

Instructions
 

  • Put potatoes in a pot and cover with water. Boil for 20 minutes or until fork tender.
  • Drain the potatoes and return to the pot together with the cream and butter.
  • Mash until well blended.
  • Season with salt and pepper.
  • Transfer the mash to a baking dish then top with cheddar and chopped bacon.
  • Bake for 10 minutes at 400F or until cheese is melted.
  • Top with scallions to serve.
