Vegan Tofu Fried Rice

Ingredients
  

  • 2 tablespoons olive oil
  • 1 small onion diced
  • 1 carrot peeled and diced
  • ¼ cup canned corn
  • cup frozen peas
  • 3 oz. smoked tofu diced into small cubes
  • 2 tablespoons sriracha sauce
  • Salt and pepper to taste
  • 1 teaspoon dijon mustard
  • 1 tablespoon peanut butter
  • 1 tablespoon turbinado sugar
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 cup brown rice cooked
  • ½ cup water
  • Freshly chopped parsley for garnish
  • Sesame seeds for garnish

Instructions
 

  • To make this vegan fried rice in a nonstick frying pan over medium heat warm the olive oil and cook the diced onion, carrot, corn, peas, and tofu for about 5 minutes.
  • Stir in the sriracha sauce, salt, and pepper to taste, dijon mustard, peanut butter, turbinado sugar, onion powder, garlic powder, and cook for about 2-3 minutes.
  • Finally stir in the cooked rice and cook for another 4-5 minutes stirring gently and adding some water to make everything bind together.
  • Serve in a bowl with freshly chopped parsley, sesame seeds and enjoy.
