Thai Drunken Noodles

Ingredients
  

  • 8 oz. Rice noodles
  • 12 oz. Shrimp peeled and deveined with the tails on or off
  • 2 Tbsp. Olive oil
  • ½ C. Chopped onion
  • 1 Red bell pepper sliced
  • 1 Roma tomato chopped
  • ½ C. Matchstick carrots
  • ¼ C. Green onions chopped
  • ½ C. Chopped fresh basil

For the sauce:

  • 2 tsp. Minced garlic
  • 1 tsp. Ginger paste
  • 1 tsp. Sesame oil
  • ¼ C. Soy sauce
  • 2 Tbsp. Oyster sauce
  • Red pepper flakes to taste optional

Instructions
 

  • Cook the rice noodles to your liking, rinse under cold water and drain well.
  • Heat the oil in a skillet over medium high heat on the stove.
  • Add in the onions and peppers, and saute for 2 minutes.
  • Mix in the shrimp, and saute until the shrimp is cooked through.
  • Stir in the tomatoes, carrots and green onions, and saute another minute or two longer.
  • In a bowl, combine the ingredients for the sauce.
  • Place the noodles into the skillet, and stir to combine.
  • Pour the sauce into the skillet, and toss to coat the ingredients well.
  • Stir in the basil, and serve immediately.
